There is a reason the wait is part of the reputation — and a reason nobody who has eaten here complains about it twice.
There is a sentence painted on the side of the truck, and it is not an apology. The food is great, but there's gonna be a wait…
Most restaurants would never put that in writing. Most restaurants have spent a decade engineering the wait out of the experience — holding cabinets, warming drawers, par-cooked trays pulled forward at eleven and pushed out the door until four. The wait disappears. So does everything that made the food worth waiting for.

What people actually keep saying
Read enough public reviews of this place and the same handful of words come back, written by people who have never met each other and are not trying to say the same thing:
- Hot. Not warm — hot, as in it was on a stove a minute ago.
- Fresh, and cooked after the order was placed rather than before.
- Seasoned properly, which is the compliment cooks actually care about.
- Portions that make people mention the portions.
- Home-cooked. That word, over and over.
- Hospitality — and specifically, that somebody who works there talked to them.
That is not a menu. That is a method. And the method is the reason for the wait.
Made to order is a cost, not a slogan
Every kitchen chooses where to spend its money. Some spend it on décor. Some spend it on marketing. A made-to-order kitchen spends it on labour and on time — the two most expensive things a small food business has — and it spends them on the one part of the experience the customer can actually taste.
It means the fish goes in the grease when you ask for it, not when it was convenient. It means the greens have been going since morning because there is no fast version of greens. It means somebody is standing at the fryer during your wait instead of pulling a tray forward.
You are not waiting because the kitchen is slow. You are waiting because the food is being made.
The honest version of "fast"
Here is the part nobody advertises: if you are in a hurry, call ahead. The number is on every page of this site and somebody will pick it up. Order before you leave, and the wait happens while you drive instead of while you stand there.
That is not a workaround. That is how regulars have always done it, everywhere, at every kitchen that cooks to order. The people who look like they have some secret arrangement with the kitchen usually just used a telephone.
The wait is real. It is also the whole point. Somebody decided a long time ago that they would rather be the place worth waiting for than the place that is merely ready.
